Make the Panna Cotta

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Allow it to bloom for about 5-10 minutes until it becomes gelatinous.

Heat the Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the mixture is hot and the sugar has dissolved, but do not let it boil.

Add Vanilla and Gelatin
Remove the saucepan from heat and stir in the vanilla extract. Add the bloomed gelatin to the warm cream mixture and stir until fully dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow it to cool slightly before transferring to the refrigerator.

Cover the cups with plastic wrap and refrigerate for at least 4 hours, or until fully set.

Prepare the Berries
In a small saucepan, combine the fresh berries, granulated sugar, and lemon juice.

Cook over medium heat for about 5-7 minutes, stirring gently until the berries have softened and the sugar has dissolved. Remove from heat and let cool.
Serve

Unmold the Panna Cotta
To serve, gently run a knife around the edge of the panna cotta and invert onto a plate.
