    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add the olive oil, milk, and vanilla extract. Mix until smooth.

    Combine Wet and Dry

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

    Bake the Cake

    Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 10-15 minutes.

    Remove from heat and let the berry compote cool to room temperature.

    In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract.

    Whip to Stiff Peaks

    Using a hand mixer or stand mixer, whip the cream on medium-high speed until stiff peaks form, about 3-5 minutes.
