Preparation

  1. 1

    Prepare the Pork Loin

Start by trimming any excess fat from the pork loin to ensure even cooking and a better flavor profile.

  2. 2

    Season the Meat

In a small bowl, mix together salt, black pepper, garlic powder, paprika, and chopped fresh rosemary. Rub this seasoning mixture all over the pork loin. Allow the pork to marinate for at least 30 minutes, or overnight in the refrigerator for enhanced flavor.

  3. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C) while the pork is marinating.

Cooking

  1. 4

    Sear the Pork

In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned pork loin and sear each side for about 3-4 minutes until a golden-brown crust forms.

  2. 5

    Roast the Pork

Transfer the skillet with the seared pork loin to the preheated oven. Roast for approximately 25-30 minutes or until the internal temperature reaches 145°F (63°C).

  3. 6

    Rest the Meat

Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute within the meat.

Serving

  1. 7

    Slice and Serve

Slice the pork loin into 1/4 lb portions and serve. It can be enjoyed on its own, with a side of vegetables, or in sandwiches.
