Making the Aioli

Mix the Calabrian Aioli
In a small bowl, combine 1 cup of mayonnaise, 1 tablespoon of Calabrian chili paste, 1 minced garlic clove, 1 tablespoon of lemon juice, and 1 teaspoon of salt. Stir until well blended. Adjust seasoning with pepper to taste.
Cooking the Chorizo

Cook the Chorizo
In the same skillet used for the vegetables, add the green chorizo sausage. Cook over medium heat until browned and cooked through, about 5-7 minutes. Remove from heat.
Assembling the Panino

Build the Panino
Spread a generous layer of Calabrian aioli on one side of each slice of ciabatta bread. On one slice, layer the cooked chorizo, sautéed bell peppers, and onions. Sprinkle with 1 teaspoon of dried oregano. Top with the second slice of bread, aioli side down.
Grilling the Panino

Grill the Panino
Preheat a grill or panini press over medium heat. Grill the assembled panino for about 3-4 minutes on each side, or until the bread is golden brown and crispy, and the filling is heated through.
Serving

Slice and Serve
Remove the panino from the grill, slice in half, and serve immediately. Enjoy your Green Chorizo Panino!
