Preparation of Base

Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk Sugar and Egg Yolks
In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and thick.

Cook the Mixture
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

Add Vanilla and Salt
Remove from heat and stir in the vanilla extract and a pinch of salt. Let the mixture cool to room temperature.

Incorporate Flavoring
Once the base has cooled, add the flavor of your choice (e.g., melted chocolate, pureed strawberries, or crushed pistachios) and mix well.

Chill the Mixture
Refrigerate the mixture for at least 2 hours, or overnight, to ensure it is very cold.

Churn the Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
