Combine Ingredients
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar has dissolved and the mixture is hot but not boiling.

Cook the Mixture
Return the entire mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Add Flavoring
Once the base mixture is cool, divide it into four separate bowls. In each bowl, add your desired flavoring: chocolate syrup, pureed strawberries, matcha powder, or chopped pistachios. Mix well to combine.

Chill Mixtures
Cover the bowls with plastic wrap and refrigerate each flavor for at least 2 hours, or until thoroughly chilled.

Churn Gelato
Pour each chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer the gelato to airtight containers and freeze for at least 4 hours to firm up before serving.
