Sauté the Onions
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped red onion and cook until softened and translucent, about 5 minutes.

Prepare the Egg Mixture
In a large bowl, whisk together the eggs and grated pecorino cheese. Season with a pinch of salt and black pepper.

Bake the Frittata
Preheat your oven to 350°F (175°C). Transfer the skillet to the oven and bake for 15-20 minutes, or until the frittata is puffed and set in the center.

Remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature, garnished with additional arugula if desired.
