Bread Dough

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

  3. 3

    Combine Ingredients

Once the yeast is activated, add it to the flour mixture along with the olive oil. Mix until a dough begins to form.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

  5. 5

    First Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Baking

  1. 6

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 7

    Shape the Dough

After the first rise, punch down the dough to release the air. Shape it into a long loaf (filone) and place it on a parchment-lined baking sheet.

  3. 8

    Second Rise

Cover the shaped dough with a cloth and let it rise for another 30 minutes.

  4. 9

    Prepare for Baking

Brush the top of the dough with olive oil and sprinkle with sea salt and fresh rosemary if using.

  5. 10

    Bake the Bread

Bake the bread in the preheated oven for 25-30 minutes, or until golden brown and sounds hollow when tapped on the bottom.

  6. 11

    Cool

Remove the bread from the oven and let it cool on a wire rack before slicing.
