    Prepare the Potatoes

    Scrub the market potatoes under cold running water to remove any dirt. Pat them dry with a paper towel. Cut each potato into halves or quarters, depending on their size, ensuring they are roughly uniform for even cooking.

    Chop Scallions and Parsley

    Thinly slice the scallions, both the white and green parts. Rinse the fresh parsley under cold water, shake off excess water, and chop it finely.

    Combine Ingredients

    In a large, heavy-bottomed pot, add the prepared potatoes, scallions, olive oil, salt, and black pepper. Toss gently to coat the potatoes evenly in the oil and seasonings.

    Place the pot over low heat. Allow the potatoes to cook slowly in the oil for about 45-60 minutes, stirring occasionally. The goal is to cook the potatoes until they are tender and infused with flavor, but not crispy.
