    Prepare the Ingredients

    Slice the chorizo sausage into thin rounds. Slice the bell peppers into strips and the red onion into thin rings.

    Make the Calabrian Aioli

    In a small bowl, combine the Calabrian chili paste and mayonnaise. Mix well and set aside.

Cooking

    Sauté the Vegetables

    Heat the olive oil in a skillet over medium heat. Add the sliced bell peppers and red onion, and sauté until softened, about 5-7 minutes. Season with dried oregano.

    Cook the Chorizo

    In the same skillet, add the sliced chorizo and cook until heated through and slightly crispy, about 3-4 minutes.

Assemble the Panino

    Layer the Ingredients

    On one slice of stirato bread, spread a generous amount of the Calabrian aioli. Top with the sautéed vegetables and chorizo. Place the other slice of bread on top.

    Grill the Panino

    Preheat a grill pan over medium heat. Place the assembled panino on the grill and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy.

Serving
