Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and butter. Place the bowl over a pot of simmering water (double boiler), stirring occasionally until melted and smooth. Remove from heat and let cool slightly.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt, folding until fully combined.

Chill the Mousse
Transfer the mousse mixture into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.

Prepare Whipped Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form. Be careful not to overwhip.

Top the Mousse
Once the mousse is set, remove it from the refrigerator and top each serving with a generous dollop of whipped cream.
