    Add salt, black pepper, fennel seeds, red pepper flakes, minced garlic, chopped thyme, and chopped rosemary to the meat mixture. Pour in the red wine and mix well until all ingredients are evenly distributed.

Stuffing the Casings

    Rinse the natural hog casings under cold water to remove any salt. Soak them in warm water for about 30 minutes, then rinse again.
