Method

Preparing the Labneh

    Strain the Yogurt

    In a bowl, mix the yogurt with 1 tsp of salt and 1 tbsp of lemon juice. Line a fine mesh strainer with cheesecloth and place it over a bowl. Pour the yogurt mixture into the strainer and let it drain in the refrigerator for at least 4-6 hours or overnight, until it thickens.

    Transfer the Labneh

    Once the yogurt has thickened to a creamy consistency, transfer it to a serving bowl. Drizzle with olive oil and season with additional salt or lemon juice to taste.

Cooking the Broccolini

    Prep the Broccolini

    Rinse the broccolini under cold water and trim the ends. Pat dry with a paper towel.

    Sauté the Broccolini

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the broccolini and season with 1 tsp of salt and 1 tsp of black pepper. Sauté for about 5-7 minutes, until the broccolini is tender and bright green.

Making the Za'atar

    Mix the Za'atar

    In a small bowl, combine 2 tablespoons of dried thyme, 1 tablespoon of ground sumac, 1 tablespoon of sesame seeds, and 1 teaspoon of salt. Mix well.

Serving

    Plate the Dish

    On a serving plate, place the sautéed broccolini. Top with a generous dollop of labneh and sprinkle with the za'atar mixture. Drizzle with additional olive oil if desired. Serve warm.
