Bacon Preparation

    Cure the Bacon

    In a bowl, mix the brown sugar, black pepper, smoked paprika, and sea salt. Rub this mixture generously over the bacon slices. Place in the refrigerator for 24 hours.

    Smoke the Bacon

    After curing, prepare your smoker or grill for indirect cooking. Smoke the bacon over low heat with your choice of wood (apple or hickory works well) until cooked through and crispy, about 2 hours. Let cool.

Kaiser Buns Preparation

    Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water. Let sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.

    Knead and Rise

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.

    Shape and Bake

    Punch down the risen dough. Divide into 8 equal pieces and shape into buns. Place on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes. Preheat oven to 375°F (190°C). Brush with beaten egg and bake for 20-25 minutes until golden brown.

Assembly

    Assemble the Sandwich

    Slice the kaiser buns in half. Layer with smoked bacon, fresh arugula, and optional cheese slices. Top with the other half of the bun.
