    In a skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Break it up into small pieces as it cooks.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper. Pour the eggs into the skillet with the cooked sausage. Stir gently to scramble the eggs until they are fully cooked, about 3-4 minutes.

    Prepare the Avocado

    While the eggs are cooking, slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into slices or cubes, depending on your preference.

    Assemble the Burrito

    Lay a flour tortilla flat on a clean surface. Spoon a portion of the egg and sausage mixture onto the center of the tortilla. Add a few slices of avocado and sprinkle cheddar cheese on top.

    Fold the sides of the tortilla over the filling, then roll it from the bottom up to enclose the filling tightly. Repeat with remaining tortillas.
