Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Fish
Clean and scale the branzino if not already done. Rinse them under cold water and pat dry with paper towels.

Make Herb Mixture
Chop the fresh parsley, thyme, and garlic. In a small bowl, combine the chopped herbs and garlic with olive oil, salt, and black pepper.

Prepare the Lemon
Slice the lemon in half and set aside one half for squeezing. Cut the other half into thin slices.
Cooking

Stuff the Fish
Gently make a few diagonal slashes on each side of the branzino. Rub the herb mixture generously over the outside and inside cavities of the fish. Place lemon slices inside the fish.

Bake the Fish
Place the prepared branzino on a baking sheet lined with parchment paper. Drizzle a little more olive oil over the top. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Serve the Dish
Remove the branzino from the oven and let it rest for a few minutes. Serve with fresh lemon wedges and garnish with additional herbs if desired.
