Brew the Coffee
Boil 4 cups of water in a kettle. Once boiled, add 2 cups of freshly ground coffee beans to your coffee maker or French press.

Allow the coffee to brew for about 4-5 minutes, then pour into mugs.

Prepare the Dough
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine 3 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of baking powder, and 1 teaspoon of salt.

In a separate bowl, cream together 1 cup of unsalted butter until smooth. Beat in 2 eggs, 1 cup of milk, and 2 teaspoons of vanilla extract until well blended.

Gradually add the wet ingredients to the dry ingredients and mix until just combined. Fold in 1 cup of chocolate chips.

Scoop the batter into a greased muffin tin, filling each cup about 2/3 full.

Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean. Let cool for 5 minutes before transferring to a wire rack.
