    Prepare the Ingredients

    Start by preheating your oven to 400°F (200°C). Chop the tomatoes into bite-sized pieces and set aside. Slice the onion into thin rings.

    Roast the Onions

    In a baking dish, toss the sliced onions with 1 tablespoon of olive oil, salt, and black pepper. Spread them out evenly and roast in the preheated oven for about 25-30 minutes, or until caramelized and golden brown.

    Cook the Bacon

    While the onions are roasting, heat a skillet over medium heat. Add the house-cured bacon slices and cook until crispy, about 5-7 minutes. Once cooked, remove from the skillet and place on paper towels to drain excess fat.

    Prepare the Mozzarella

    While the bacon is cooking, slice the fresh mozzarella into rounds.

    Combine Ingredients

    In a large bowl, combine the roasted onions, chopped tomatoes, and sliced mozzarella. Drizzle with the remaining tablespoon of olive oil and balsamic vinegar, and gently toss to combine.

    Crumble the crispy bacon over the top of the salad mixture. Season with additional salt and black pepper to taste. Serve immediately as a delicious side dish or light main course.
