Prepare the Cured Meats
Slice the prosciutto, salami, and capicola into thin pieces. Arrange them on a large serving platter in a decorative manner.

Prepare the Cheeses
Cut the mozzarella into bite-sized balls or slices. Shave or cut the parmesan into thin shards, and crumble the gorgonzola. Place the cheeses on the platter next to the cured meats.

Prepare the Olives and Vegetables
Drain any brine from the mixed olives. Rinse the cherry tomatoes and cut them in half. Slice the roasted red peppers into strips. Add these to the platter, filling in any gaps.

Prepare the Accompaniments
Slice the baguette into small rounds or diagonal slices. Drizzle olive oil and balsamic vinegar in small bowls for dipping, and place these bowls on the platter.
