Method

Preparation of Dry Ingredients

  1. 1

    Mix Dry Ingredients

In a medium mixing bowl, combine almond flour, granulated sugar, baking powder, and salt. Whisk together until all ingredients are well incorporated.

Preparation of Wet Ingredients

  1. 2

    Mix Wet Ingredients

In another bowl, beat the egg and then add the vanilla extract and melted unsalted butter. Mix until smooth.

Combining Ingredients

  1. 3

    Combine Mixtures

Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix.

  2. 4

    Add Optional Ingredients

If desired, fold in sliced almonds and chocolate chips into the dough.

Baking

  1. 5

    Preheat Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. 6

Using a spoon or cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

  3. 7

    Bake Cookies

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may look soft but will firm up as they cool.

  4. 8

    Cool Cookies

Remove from the oven and let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
