Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 18-20 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl, and gently fold in the vinegar mixture using a wooden spoon. Allow the rice to cool to room temperature.

Prepare Spicy Tuna Filling

    Prepare the Tuna

    Finely dice the sushi-grade tuna and place it in a mixing bowl.

    Mix the Ingredients

    Add mayonnaise, Sriracha sauce, chopped green onions, sesame oil, and salt to the bowl with tuna. Mix well until all ingredients are combined.

Assemble the Rolls

    Prepare the Nori

    Lay a bamboo sushi mat on a flat surface and place a sheet of nori, shiny side down, on the mat.

    Add Sushi Rice

    With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

    Add the Filling

    Place a line of the spicy tuna filling across the center of the rice. Add a few slices of cucumber on top of the tuna.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Seal the edge with a little water.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. If desired, sprinkle with sesame seeds before serving. Enjoy your spicy tuna roll!
