Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Combine Crust Ingredients
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.

Form the Crust
Press the mixture into the bottom of a 9-inch springform pan evenly to form the crust. Use the back of a measuring cup to help press it down firmly.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool while preparing the filling.
Filling Preparation

Mix Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream
Gradually add the sugar and mix until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Sift the all-purpose flour over the mixture and gently fold it in until just incorporated.

Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake in the oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and leave the cheesecake in the oven for another hour.
