Peel and devein the shrimp. Finely chop half of the shrimp and leave the other half whole for texture.

In a large bowl, combine the chopped shrimp, ground pork, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and white pepper. Mix well until all ingredients are evenly combined.

Lay out the wonton wrappers on a clean surface. Keep a small bowl of water nearby to seal the dumplings.
