Burger Patty Preparation

    Prepare the Flax Egg

    In a small bowl, combine flaxseed meal and water. Stir well and let sit for about 5-10 minutes until it becomes gelatinous.

    Combine the Ingredients

    In a large mixing bowl, combine the mashed beets, black beans, cooked black rice, chopped onion, minced garlic, and chopped parsley.

    Add Spices

    Add the ground cumin, smoked paprika, salt, and black pepper to the mixture. Stir until well combined.

    Incorporate the Flax Egg

    Add the prepared flax egg to the mixture and mix until all ingredients are well incorporated. If the mixture is too wet, add a little more cooked black rice or breadcrumbs.

    Shape the Patties

    Divide the mixture into four equal portions and shape each portion into a patty.

    Cook the Patties

    Heat a non-stick skillet over medium heat. Cook each patty for about 5-7 minutes on each side, or until golden brown and heated through.

    Prepare the Buns

    Toast the gluten-free burger buns lightly in a toaster or on a skillet.

    Assemble the Burger

    Spread vegan mayonnaise on the bottom half of each bun. Place a lettuce leaf, followed by the burger patty, sliced tomato, and avocado on top. Cap it with the top half of the bun.

    Serve immediately with your favorite side, such as sweet potato fries or a salad.
