Chop the Vegetables

Begin by washing and peeling the carrots and potatoes. Chop the carrots, potatoes, celery, and onion into small, even pieces. Mince the garlic cloves and set aside.

Wash the green beans and trim the ends. Cut them into 1-inch pieces.

Rinse the spinach leaves under cold water to remove any dirt or grit. Set aside.
