Meat Substitute Preparation

    Prepare the Meat Substitute

    In a large mixing bowl, combine cooked quinoa, mashed chickpeas, ground flaxseed, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

    Form the Patties

    Form the mixture into burger-like patties. You should get about 4 patties.

    Cook the Patties

    Heat olive oil in a skillet over medium heat. Add the patties and cook for about 5-7 minutes on each side, or until golden brown and heated through.

Sandwich Assembly

    Grill the Onions

    In the same skillet, add more olive oil if needed and sauté sliced onions over medium heat until they are soft and caramelized, about 10 minutes.

    Assemble the Sandwich

    Spread vegan mayo on two slices of whole grain bread. Place the cooked patty on top, followed by the grilled onions, lettuce, and tomato slices.

    Complete the Sandwich

    Top with the remaining slices of bread. Cut in half and serve with love.
