In a mixing bowl, combine the cooked quinoa and mashed chickpeas until well mixed.

Mix in Dry Ingredients
Add ground flaxseed, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper to the quinoa and chickpea mixture. Mix until all ingredients are evenly distributed.

Shape the mixture into four equal-sized patties, ensuring they are compact and hold together well.

Cook the Patties
Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side or until they are golden brown and heated through.

Assemble the Sandwich
On a slice of whole grain bread, spread 1 tablespoon of vegan mayo. Place a patty on top, followed by grilled onions, lettuce leaves, tomato slices, and jalapeno peppers. Top with another slice of bread spread with 1 tablespoon of vegan mayo.
