Chop the Cabbage
Finely shred the green cabbage and red cabbage using a sharp knife or a mandoline slicer. Aim for thin, even pieces to ensure a good texture in the slaw.

Prepare the Dressing
In a medium bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, Dijon mustard, smoked paprika, garlic powder, black pepper, and a pinch of salt and cayenne pepper. Adjust seasoning to taste.

Combine Ingredients
In a large bowl, combine the shredded green and red cabbage. Pour the dressing over the cabbage and mix thoroughly to ensure all the cabbage is evenly coated.

Sprinkle the chopped fresh parsley over the slaw and mix gently to incorporate.
