Prepare the Fruit
Start by cutting the pitaya in half and scooping out the flesh. Put it in a blender. Peel the banana and add it to the blender along with the pitted dates.

Blend the Base
Pour in the coconut milk and coconut yogurt into the blender. Blend all ingredients until smooth and creamy. If the mixture is too thick, add a little more coconut milk to reach your desired consistency.

Prepare the Toppings
While the base is blending, wash the strawberries and slice them. Set aside. If using shredded coconut, you can toast it lightly in a pan for added flavor, if desired.

Assemble the Bowl
In a serving bowl, pour the blended pitaya mixture as the base. Make sure to leave enough room for toppings.

Add Toppings
Sprinkle granola over the top of the pitaya base, followed by the shredded coconut. Arrange the sliced strawberries on top.

Drizzle Sweetener
Finally, drizzle agave syrup or raw honey over the top for added sweetness.
