Preparation of Fish

Clean the Dover Sole
Rinse the whole Dover sole under cold running water and pat dry with paper towels.

Cook the Fish
Preheat a large skillet over medium heat. Add the fish and cook for about 4-5 minutes on each side until golden brown and cooked through. Once done, remove from skillet and keep warm.

Prepare the Asparagus
Trim the tough ends off the asparagus and rinse under cold water.

Sauté the Asparagus
In the same skillet used for the fish, melt the butter over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

Cook the Asparagus
Add the asparagus to the skillet. Season with salt and black pepper, and sauté for about 5-7 minutes until they are tender yet crisp.

Mix the Sauce
In a small bowl, combine almond butter, water, soy sauce, maple syrup, and sesame oil. Whisk together until smooth and creamy.
