Prepare the egg mixture

In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Cook the spinach

In a skillet, add a small amount of olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes.

Combine and bake

Add the cooked spinach and cheddar cheese to the egg mixture. Pour into a greased baking dish and bake at 350°F (175°C) for 25-30 minutes or until the eggs are set and the top is golden.

Prepare the avocado toast

Toast the bread slices until golden brown. Meanwhile, mash the avocados in a bowl and mix in lemon juice, salt, and black pepper.

Assemble

Spread the mashed avocado on each slice of toasted bread. Slice the tomato and place on top of the avocado toast for garnish.

Drizzle with olive oil

Finish by drizzling a little olive oil over the assembled avocado toast.

Mix the beverage

In a pitcher, combine the fresh orange juice and sparkling water. Stir gently to mix.

Add a bunch of fresh mint leaves into the pitcher for added flavor and garnish.
