Fish Preparation

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Season the Fish

    Rinse the whole branzino under cold water and pat dry with paper towels. Rub olive oil all over the fish, inside and out. Season generously with salt and black pepper.

    Stuff the Fish

    Place lemon slices and chopped fresh parsley inside the cavity of the fish.

    Bake the Fish

    Place the fish on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.

Tomato Sauce Preparation

    Sauté Aromatics

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and chopped onion, sautéing until the onion becomes translucent (about 3-4 minutes).

    Add Tomatoes and Seasonings

    Stir in the canned diced tomatoes, fresh basil, dried oregano, salt, black pepper, and red wine vinegar. Bring the mixture to a simmer.

    Cook the Sauce

    Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, to allow the flavors to meld together.
