Main Ingredients

Method

Preparation

  1. 1

    Prepare the Asparagus

Wash the asparagus and trim the tough ends. Set aside.

  2. 2

    Prepare the Walleye Pike

Pat dry the walleye pike fillets with paper towels and season both sides with salt, black pepper, and garlic powder.

Cooking

  1. 3

    Coat the Walleye Pike

In a shallow dish, spread the almond flour. Dredge each seasoned walleye pike fillet in the almond flour, ensuring an even coating on both sides.

  2. 4

    Cook the Walleye Pike

In a large skillet, melt 2 tablespoons of butter over medium heat. Once melted, add the almond-coated fillets to the skillet. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove from skillet and keep warm.

  3. 5

    Sauté the Asparagus

In the same skillet, add the remaining 2 tablespoons of butter. Add the trimmed asparagus and sauté for about 5-7 minutes until tender-crisp. Squeeze the juice of the lemon over the asparagus while cooking. Season with salt and pepper to taste.

Serving

  1. 6

    Plate the Dish

On a serving platter, arrange the sautéed asparagus alongside the walleye pike fillets. Drizzle any remaining lemon butter from the skillet over the fish and asparagus before serving.
