Prepare the Cream Mixture

    Heat the Cream

    In a medium saucepan, heat the heavy cream over medium heat until it is hot but not boiling. Stir occasionally to prevent it from scorching.

    Add Vanilla Beans

    Split the vanilla beans lengthwise and scrape the seeds into the cream. Add the empty pods to the mixture as well. Continue to heat the mixture for about 5 minutes, then remove from heat and let it steep.

Prepare the Custard

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thickened.

    Combine Cream and Egg Mixture

    Slowly pour the warm cream mixture into the egg yolk mixture while continuously whisking to avoid cooking the eggs. This will temper the eggs and create a smooth custard.

Bake the Crème Brulee

    Preheat Oven

    Preheat your oven to 325°F (163°C).

    Pour into Ramekins

    Strain the custard through a fine-mesh sieve into a clean bowl or pitcher to remove the vanilla pods and any coagulated bits. Pour the custard into individual ramekins, filling them about 3/4 full.

    Create a Water Bath

    Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. This will help the custard cook evenly.

    Bake in the preheated oven for about 30-35 minutes, or until the custards are set around the edges but still slightly jiggly in the center. Remove from the oven and let cool to room temperature.

    Refrigerate the ramekins for at least 2 hours or overnight to allow the flavors to meld and the custard to set.

    When ready to serve, remove the ramekins from the refrigerator and sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.

    Using a kitchen torch, carefully caramelize the sugar until it is golden and crispy. If you do not have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.
