Cook Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until rice is tender. Remove from heat and let it sit for 10 minutes, covered.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice has rested, fluff it with a fork and gently fold in the vinegar mixture. Let it cool to room temperature.

Marinate Tuna
Dice the fresh sushi-grade tuna into bite-sized cubes. In a separate bowl, combine soy sauce, sesame oil, and chopped green onions. Add the diced tuna to the marinade and gently mix until the tuna is well coated. Let it marinate in the refrigerator for at least 15 minutes.

After the tuna has marinated, sprinkle sesame seeds over the tuna mixture and gently toss to combine.
