Method

Preparing Calamari

    Clean and Prepare Calamari

    If using whole calamari, clean and slice into rings. Rinse under cold water and pat dry with paper towels.

    Mix Dry Ingredients

    In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

    Coat Calamari

    Dredge the calamari rings into the flour mixture, ensuring they are well coated. Shake off any excess flour.

Frying Calamari

    Heat Oil

    In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and Keep Warm

    Remove the fried calamari with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil. Keep warm while frying the remaining batches.

Making Sweet Chili Sauce

    In a bowl, mix the sweet chili sauce, finely chopped jalapeno, red bell pepper, green bell pepper, and lime juice.

    Taste the sauce and adjust with extra lime juice or sweet chili sauce according to preference.
