Method

Grits Preparation

  1. 1

    Cook the Grains

In a large saucepan, bring the water to a boil. Stir in the grits and salt, reduce the heat to low, and cover. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

  2. 2

    Add Cream and Cheese

Once the grits are cooked, stir in the heavy cream, butter, black pepper, and cheddar cheese. Mix well until the cheese is melted and everything is combined. Keep warm.

Shrimp Preparation

  1. 3

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Season and Cook

Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook for about 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.

  3. 5

Finish with Lemon and Green Onions

Remove from heat and stir in the lemon juice and sliced green onions. Mix well.

Assembly

  1. 6

    Serve

Spoon the creamy grits onto plates, and top with the Cajun shrimp mixture. Garnish with additional green onions if desired.
