Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly.

  3. 3

    Press into Pan

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

  4. 4

    Bake Crust

Bake the crust in the preheated oven for 10 minutes, then remove and let cool while preparing the filling.

Filling Preparation

  1. 5

    Prepare the Filling

In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.

  2. 6

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream, mixing until fully incorporated and smooth.

  3. 7

    Mix in Vanilla and Eggs

Add the vanilla extract and eggs one at a time, mixing well after each addition until combined.

  4. 8

    Incorporate Fruit Puree

Fold in the seasonal fruit puree gently until just combined.

Baking the Cheesecake

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

  2. 10

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

  3. 11

    Cool and Chill

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight.

Serving

  1. 12

    Serve Chilled

Once chilled, slice the cheesecake and serve with whipped cream and fresh seasonal fruit if desired.
