For the Calamari

Prepare the Calamari
In a large bowl, combine the cleaned calamari rings with salt, black pepper, paprika, and garlic powder. Toss to coat well.

Coat the Calamari
In another bowl, combine flour and cornstarch. Dip each calamari ring in the beaten eggs, then dredge in the flour-cornstarch mixture, ensuring even coating.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
In batches, fry the coated calamari for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Combine Sauce Ingredients
In a small bowl, mix hoisin sauce, finely chopped jalapenos, minced garlic, rice vinegar, sesame oil, honey, and water. Stir until well combined.

Adjust Flavor
Taste the sauce and adjust seasoning if necessary. You can add more honey for sweetness or more jalapenos for heat.
