    Clean the mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or sand. Remove any beards (the fibrous strands) by pulling them out firmly.

    Chop the aromatics

    Finely chop the shallots and garlic, and roughly chop the fresh parsley. Set aside.

Cooking

    Sauté aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing for about 3-4 minutes until they are soft and fragrant.

    Add liquids

    Pour in the dry white wine and fish stock. Bring the mixture to a simmer, scraping any bits off the bottom of the pot.

    Add mussels

    Add the cleaned mussels to the pot, cover it with a lid, and let them cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

    Finish sauce

    Reduce the heat to low and stir in the heavy cream, chopped parsley, salt, black pepper, and crushed red pepper flakes. Allow to cook for an additional 2-3 minutes to meld the flavors.

Serving

    Serve the mussels

    Ladle the mussels and broth into bowls. Garnish with additional chopped parsley if desired and serve with crusty bread for dipping.
