Method

Crust

  1. 1

    Prepare the crust

In a medium bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and mix until the crumbs are evenly coated and the mixture resembles wet sand.

  2. 2

    Form the crust

Press the crumb mixture firmly into the bottom and sides of a 9-inch pie pan to form an even layer. Use the bottom of a measuring cup or your fingers to compact it well.

  3. 3

    Bake the crust

Preheat the oven to 350°F (175°C). Bake the crust for about 8-10 minutes or until golden brown. Remove from the oven and let it cool while preparing the filling.

Filling

  1. 4

    Prepare the filling

In a large mixing bowl, whisk together the egg yolks until they are light and fluffy.

  2. 5

    Combine ingredients

Add the sweetened condensed milk, key lime juice, and lime zest to the bowl. Whisk until the mixture is smooth and well combined.

  3. 6

    Fill the crust

Pour the lime filling into the cooled graham cracker crust, spreading it evenly.

  4. 7

    Bake the pie

Bake the pie in the preheated oven for about 15 minutes or until the filling is set. Remove from the oven and let it cool to room temperature.

  5. 8

    Chill the pie

Once cooled, refrigerate the pie for at least 3 hours or until fully chilled.

Topping

  1. 9

    Make the whipped cream

In a medium bowl, beat the heavy whipping cream and powdered sugar together with an electric mixer until soft peaks form.

  2. 10

    Top the pie

Spread the whipped cream over the chilled pie. Garnish with lime wedges before serving.
