    Prep the Potatoes

    Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl of cold water to remove excess starch.

    Drain and Dry

    After soaking for about 10 minutes, drain the grated potatoes and spread them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.

    While the potatoes are soaking and drying, chop the onion into small pieces.

    In a large non-stick skillet, heat the vegetable oil and butter over medium-high heat until shimmering.

    Add the grated potatoes and chopped onion to the skillet. Spread them out evenly and press down with a spatula. Season with salt, black pepper, and garlic powder.
