Method
Prepare the Salmon

Preheat the Grill
Preheat your grill to medium-high heat, around 375°F (190°C).

Sauté the Spinach

Heat the Oil
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add Spinach
Add the fresh spinach leaves to the skillet. Cook while stirring until the spinach is wilted, about 3-4 minutes. Season with salt and black pepper.
Prepare the Lemon Butter

Melt the Butter
In a small saucepan, melt 4 tablespoons of unsalted butter over low heat.

Add Lemon and Parsley
Once melted, stir in 1 tablespoon of lemon juice, 1 teaspoon of lemon zest, and 2 tablespoons of chopped parsley. Mix well and remove from heat.
Serve the Dish

Plate the Spinach
Divide the sautéed spinach among four plates, creating a bed for the salmon.

Place a grilled salmon fillet on top of the sautéed spinach on each plate.
