Preparation of Chips

Prepare the Potatoes
Peel the russet potatoes and cut them into thick strips (about 1/2 inch wide). Rinse the cut potatoes in cold water to remove excess starch and pat them dry with a clean towel.

First Fry
Heat vegetable oil in a large pot or deep fryer to 325°F (160°C). Fry the potato strips in batches for about 5-6 minutes, or until they are soft but not browned. Remove them from the oil and place them on paper towels to drain.

Cool Down
Allow the fries to cool for about 30 minutes while you prepare the fish.
Preparation of Fish

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and thick enough to coat the back of a spoon.

Heat the Oil
In a large pot, heat the vegetable oil to 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, allowing the excess to drip off, then carefully place the battered fish in the hot oil.

Fry the Fish
Fry the fish fillets for about 4-5 minutes per side, or until golden brown and crispy. Remove them from the oil and drain on paper towels.
Final Fry for Chips

Second Fry
Increase the oil temperature to 375°F (190°C). Fry the pre-cooked potato strips again in batches for about 3-4 minutes, or until they are golden brown and crispy. Remove and drain on paper towels, then season with salt to taste.
Tartar Sauce (optional)

Mix the Sauce
In a small bowl, mix together the mayonnaise, diced pickles, lemon juice, and chopped dill until well combined. Adjust seasoning with salt if necessary.

Serve the crispy fish and chips hot with the optional tartar sauce on the side.
