Method

Preparation

  1. 1

    Season the Steak

Take the 14 oz filet mignon and pat it dry with paper towels. Season generously on both sides with salt, black pepper, and garlic powder.

  2. 2

    Prepare the Cooking Surface

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Add 2 tablespoons of olive oil and allow it to heat until shimmering.

Cooking

  1. 3

    Sear the Filet

Once the oil is hot, carefully place the seasoned filet mignon in the skillet. Sear for about 4-5 minutes without moving it to develop a crust.

  2. 4

    Flip and Add Butter

After 4-5 minutes, flip the steak using tongs. Add 2 tablespoons of unsalted butter to the pan, along with the rosemary and thyme sprigs.

  3. 5

    Baste the Steak

As the butter melts, tilt the skillet slightly and use a spoon to baste the filet mignon with the melted butter. Cook for an additional 4-5 minutes for medium-rare, or to your desired doneness.

  4. 6

    Rest the Steak

Remove the filet mignon from the skillet and transfer it to a cutting board. Let it rest for 5-10 minutes before slicing.

Serving

  1. 7

    Plate the Filet

Slice the filet mignon against the grain and serve it on a plate. Drizzle any remaining pan juices over the top and garnish with fresh rosemary and thyme.
