Preparation

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Pat the steak dry with paper towels. Rub both sides of the filet mignon with olive oil, then season generously with salt and black pepper on both sides.

Cooking

    In a heavy skillet or cast-iron pan, heat over high heat until very hot, about 5 minutes.
