Heat the Cream
In a medium saucepan, combine 2 cups of heavy cream, 1 cup of granulated sugar, and a pinch of salt. Split the vanilla bean lengthwise, scrape the seeds into the cream mixture, and add the pod. Heat over medium heat until just below boiling, stirring occasionally. Remove from heat and let it steep for 15 minutes.

Prepare the Egg Yolks
In a large mixing bowl, whisk together 6 large egg yolks until they become slightly thick and pale in color. This process helps in creating a smooth custard.

Strain the Mixture
Pour the combined mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any cooked egg bits and ensure a silky texture.

Preheat and Prepare Ramekins
Preheat your oven to 325°F (160°C). Place eight 6-ounce ramekins in a large baking dish. Once ready, fill each ramekin with the custard mixture, leaving about 1/2 inch from the top.

Bake
Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the centers are still slightly jiggly. Remove from the oven and let cool in the water bath for about 10 minutes, then transfer to the refrigerator to chill for at least 2 hours, or overnight.

Caramelize the Sugar
Once the custards are fully chilled, sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard. Using a kitchen torch, caramelize the sugar until it melts and forms a golden brown crust. If you do not have a torch, you can place the ramekins under a broiler for a few minutes to achieve the same result. Allow the crust to harden for a minute before serving.
