Pasta and Crawfish

Andouille Sausage

Method

Preparation

  1. 1

    Cook the Macaroni

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Andouille Sausage

In a skillet over medium heat, add the sliced Andouille sausage. Cook until browned and slightly crispy, about 5-7 minutes. Remove from heat and set aside.

Cheese Sauce

  1. 3

    Make the Roux

In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until the mixture is slightly golden.

  2. 4

    Add Milk and Cheese

Gradually pour in the milk, whisking constantly to avoid lumps. Continue to cook for about 5 minutes until the sauce thickens. Stir in the shredded cheddar cheese and cream cheese until melted and smooth.

  3. 5

    Season the Sauce

Add salt, black pepper, cayenne pepper, and garlic powder to the cheese sauce. Mix well to combine.

Combine Ingredients

  1. 6

    Mix it All Together

In a large mixing bowl, combine the cooked macaroni, crawfish tails, and Andouille sausage. Pour the cheese sauce over the mixture and stir until everything is well coated.

Baking

  1. 7

    Prepare for Baking

Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray.

  2. 8

    Transfer to Baking Dish

Pour the crawfish mac'n'cheese mixture into the greased baking dish, spreading it evenly.

  3. 9

    Add Topping

In a small bowl, combine breadcrumbs, grated Parmesan cheese, and paprika. Sprinkle this mixture evenly over the mac'n'cheese.

  4. 10

    Bake

Bake in the preheated oven for about 25-30 minutes, or until the top is golden and crispy.

Serving

  1. 11

    Serve Hot

Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious Crawfish Mac'n'Cheese!
