Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the chicken to about 1/2 inch thickness.

Setup Breading Station
Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.

Bread the Chicken
Dredge each piece of chicken in the flour, shaking off the excess, then dip into the egg, and finally coat with the breadcrumb and Parmesan mixture, pressing gently to adhere.

Cook the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Salad Ingredients
In a large bowl, combine the baby arugula, halved cherry tomatoes, torn fresh mozzarella, and torn basil leaves.

Dress the Salad
In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and black pepper to taste. Drizzle over the salad and toss gently to combine.
To Serve
