Method

Prepare Turkey Chorizo

    Cook the Turkey

    In a skillet, heat olive oil over medium heat. Add the ground turkey, breaking it up with a spoon.

    Season the Turkey

    Add paprika, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Cook until the turkey is browned and cooked through, about 7-10 minutes. Remove from heat and set aside.

Prepare Eggs

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Eggs

    In the same skillet, pour in the beaten eggs and cook over medium heat, stirring gently until just set. Remove from heat and set aside.

Assemble Burritos

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet for about 30 seconds on each side until pliable.

    Fill the Tortillas

    On each tortilla, layer turkey chorizo, scrambled eggs, red chili sauce, black beans, diced bell peppers, pico de gallo, and shredded Chihuahua cheese.

    Roll the Burritos

    Fold in the sides of the tortilla and roll it up tightly from the bottom to enclose the filling.

Serve

    Heat the Burritos

    If desired, place the rolled burritos seam-side down in the skillet over medium heat for 2-3 minutes to crisp the outside.

    Slice and Enjoy

    Slice the burritos in half and serve with extra red chili sauce or pico de gallo on the side.
